This made me start thinking of the concept of cheese biscuits and I remembered some people add slices of ham. I then thought what can I add? Kilishi? No! Too chewy. Suya? No! Not soft enough. Dambu nama? Bingo!
Dambu Nama is a delicacy from Northern Nigeria. It is shredded beef that is pounded and basically transformed into a cotton wool texture. This is pulled beef to the next level. It was soft enough to work for what I needed it to do.
1 cup All purpose Flour
1/2 cup Dambu Nama
1/4 cup Mayonnaise
1 teaspoon Baking Powder
1/2 cup Milk
3 Tablespoons of Grated Cheddar Cheese
A pinch of Salt
In a bowl, mix your flour, baking powder, salt, milk, mayonnaise, dambu nama and cheese.
Mix all ingredients till you get a soft dough.
Preheat your oven to 425F.
In a muffin tin, grease your pan or line it with parchment paper and scoop some of the dough in each section.
Place in the oven and bake for 12-15 minutes.
Take out and serve warm.
